The Kitten Left Behind . . .
The kitten has decided that my daughter is her 'mommy' and literally hops and jumps for joy when she sees her. Unfortunately, we can't keep the kitten so continue our search for a good home. We have heard from several sources that the Humane Society near us has too many kittens so any cats brought in will be put down almost immediately. Guess we are too soft-hearted but we can't hand over a wiggling bundle of fur knowing what will happen.
Their last morning together . . .
The last morning the three kittens got to spend together. These three kittens were an interesting trio and seemed to be very close, always looking to each other for fun and entertainment. We found a home for the orange kitten and a home for the gray kitten but the little black and white one is still with us and exceedingly lonely. We are still looking for a gentle, loving home for the little girl as well as homes for three other kittens residing in the bushes outside our house. Now, those three are a rough, tough, potential great mouser bunch. They are the same age as the above three but are all muscle and brawn.
First Fruits of the Season . . .
My husband's hard work is starting to pay off as we harvest the first of the summer produce. Homegrown tomatoes really spoil us because they are such a contrast to the ones sold in the store. It is like an Easter Egg hunt trying to find green beans midst all the vines and foliage. Just when you think you've picked all that there is, more seem to suddenly appear. We are not, however, complaining because a dollar not spent at the grocery store is one we can save. In this economy, every penny counts.
Saucy Chicken
Another fast and relatively easy meal for a busy day. Side with some hot rice and a crisp salad and your family will be happily fed another day.
Saucy Chicken
4-6 boneless chicken breasts
2 cans cream of mushroom soup
2 packages dry onion soup mix
1/4 cup white wine
1 small can or 1/2 cup fresh mushrooms
1/2 teaspoon chili flakes
Black pepper to taste
Salt and pepper the chicken breasts and brown in a bit of vegetable oil or butter in a large frying pan. If using fresh mushrooms, add now and stir a few minutes to brown them a bit. Add the rest of the ingredients, cover and simmer for 1 1/2 - 2 hours or until cooked through and tender. Serve over rice.
