One-Pot Meal

Although this recipe can be simmered on the stove, it is nice to have cooking away in a crock pot while you go about your errands on an especially busy day. It is always nice to come home with dinner ready and only a salad or bread to add to the table.

One-Pot Meal

½ to 1 lb. ground beef
½lb. bacon, cut into small pieces
1 cup chopped onion
2 cans (1lb., 15oz.) pork and beans
1 can (1lb.) Kidney beans, drained
1 can (l lb.) butter lima beans, drained
1 cup catsup
¼ cup brown sugar
3 tablespoons white vinegar

Brown ground meat, cook bacon, saute onions - Do individually in same pan to minimize fat. Place in crockpot with remaining ingredients. Stir together well. Cover and cook on low 4-9 hours.

If you don't have catsup on hand, bottled barbecue sauce works just fine, too. Leave out the sugar and vinegar if you opt for bottled sauce.

Liberal Catholics . . .

Nothing more disheartening than a liberal Catholic. Now, I respect each person's right to believe what they want to believe and to worship in a way that makes them a productive person in their spiritual and every day life. I just get upset when a Catholic veers so far off the prescribed path. The Catholic Church is pretty clear on what is right and wrong in the world. We have those ten, little rules that are there for easy reference, yet I so often hear, "Yes, I know that is what the Church teaches but I think the Church is wrong." I have to wonder why they don't just go out and find a religion more in tune with their personal desires.

Today, a daily Mass attendee actually inferred that we sometimes have to give up things for the good of the whole. Uh, we were talking about abortion! He was telling me that sacrificing a baby for usually selfish purposes was a good thing in certain circumstances? Good thing I was heading into Mass as I was literally handed another person to keep in my prayers. It's an interesting and often sad world. Glad it's not the one slated for eternity!

Baking to Keep Warm . . .

Clouds and sunshine today. I like the way the clouds wander over and block the sun and then move to pour the sunlight back over us. The sun, however, hasn't warmed things up too much but that's okay with me. I caught up on my backing and have some gluten-free snack crackers cooling and a huge loaf or rye breading baking in the oven. What a heating system: it is warm and smells good, too!

My husband doesn't have a gluten allergy but he likes some easier to digest snack crackers and making them out of flax seed, ground rice, and quinoa seems to work for him.

Going with a German slight to dinner in order to include the fresh rye bread. I also got some Chakki atta Indian flour and plan to make some Chapati this coming week. Just haven't figured out a meal to go with it, yet. King Arthur's Flour is a great on-line place to buy some interesting ingredients. Every year or so, I treat myself to something unusual to learn something new to bake/cook.

The current quilt squares are officially completed. Now comes the quilting part and all the hand sewing. I guess that's why I'm here on the computer as I'm not sure I want to get that involved in the rest of it today! That, or I'm being lazy!

Respecting the soldiers who serve us and their families!

I visited Israel years ago and one of the things that impressed me was their high regard for their soldiers. Being a small country constantly on alert, one saw a lot of them going on or coming from their appointed rounds. At one point, our tour bus picked up a young soldier and went a bit out of our schedule in order to get them home.

You have to wonder what Israel and other countries, for that matter, think about a president who puts Planned Parenthood and abortion ahead of paying our military. I was the daughter of a military airman and I remember how we often barely made it from pay day to pay day. I can't even imagine how we would have coped if the check was held up a week or more.

It's kind of like the budget decisions are being held hostage: continue funding Planned Parenthood with our tax money regardless of our view on the subject or the military doesn't eat.
