Sharing a time-saving idea . . .

 
Yeah, raw meat balls are not too tasty looking, BUT, if you are making meat balls, you might as well make a lot. Why? You freeze them on a baking sheet and then bag them. When they are frozen, they don't stick together so when you need to make a quick batch of spaghetti and meat balls, you just take out what you need. It's kind of like a culinary bank account in your freezer! You can brown them right from the freezer, throw in your sauce, and simmer. One less worry for a great evening meal when you are having a busy day.

Whenever ground meat is on sale, I try and do this. When I have purchased four or five pounds, I spend an hour seasoning and forming the meat into meat loaves, meat balls, and hamburgers. More than once, I've been happy to call home from shopping and tell one of the children to put the frozen meat loaf into the oven for dinner. I freeze the meat loaf on oven-proof dishes. I put it in a cold oven, turn it on to 350 degrees and this avoids having the dish crack with any sudden temperature changes.

Grilling 101

 
Okay, dinner was almost successful. The rub recipe was a bit salty for our tastes. That's not to say it was not good, just too much salt. My husband is excited about trying the same recipe, again and using a scant half of the amount of salt called for in the recipe. The rest of the spices were great and imparted a nice balance of spice and sweetness to the chicken.

Ah, there's the rub . . .

Taking two chances with dinner this evening. I'm trying a new seasoning rub for the chicken and my husband is going to grill it on the barbecue. If it turns our wonderfully, I will post the fabulous results tomorrow. If you never hear me on this subject, again, don't ask!

This is supposed to be a take off on the seasoning used at Dollywood Amusement Park. It looked interesting so, naturally, I had to give it a try. Hey, I had the ingredients on hand as well as chicken thighs. I like to use all the same when grilling chicken so it all gets done at the same time.

Here is what was used for the rub seasoning:

1/2 cup salt
6 tablespoons garlic powder
6 tablespoons ground cumin
4 tablespoons chili powder
4 tablespoons black pepper
4 taspoons unsweetened cocoa

You mix it all together and then dump in your chicken and rub all the pieces until they are well covered. Refrigerate for a couple hours or even overnight.  Grill or bake according to your preferences. It sounds easy and tasty. Just the rub seasoning smelled good on the raw chicken. I have hopes.

Meanwhile, I'm disposing of some newly harvested zucchini by way of muffins which are happily baking in the oven as I type. Actually, they are zucchini/carrot/walnut/cranberry muffins. Again, if they turn out well, I'll post the recipe tomorrow or the next day. Judging from the scent, I think it is time to remove the baking pans from the oven so I will leave you to your own musings over what to cook for dinner!

Summer Blender Workout . . .

Our blender gets a workout in the summer months. We don't keep cola or other sodas in the house but prefer to have a cool drink that is good  for you but still enjoyable and satisfying. Here are some suggestions that are open to your own touches and ideas.



Fruit Cooler
2 peeled bananas
1 1/2 cups frozen strawberries, blueberries, or raspberries
1 cup orange juice
(Can substitute 1/2 cup water, 1/2 fresh lemon juice, and 1/4 cup sugar for the orange juice.

Put it all in the blender and process until smooth. Get out the straws and enjoy!

Mango Mash
2 cups peeled, chopped fresh mango
1/2 cup fruit juice, your choice
4-6 scoops of vanilla ice cream (I use the low-fat variety)
Some grated lemon zest

Throw it all into the blender, spin until smooth, and serve.

Green Smoothie
1/4 cup frozen, chopped spinach
1/4 cup fresh broccoli
1 chopped pear
1 chopped apple
1 cup frozen vanilla yogurt
Orange juice as needed.
Ice

Process all the ingredients except the orange juice until smooth.  Add ice and enough juice to process to form a cold, smooth drink.

All these recipes are for two adults/big kids or four little ones. You might sneak the green one in a cup with a lid so the children taste it before making a decision on a green drink! It is really tasty and lends itself to most any changes/ideas you might come up with. If it isn't sweet enough, you can always throw in a banana.

Idea . . .

My daughter adds 1/4 cup of cooked oatmeal to her smoothies as she says it makes them much smoother and adds some extra fiber, vitamins, etc.

Spicy Green Tomato Cake

Although I have yet to actually try doing Green Fried Tomatoes, I thought I'd check around and see if there were some dessert uses for them. I'm okay with odd as long as the end result  doesn't taste weird. This one is definitely going to go into my oven today.

Spicy Green Tomato Cake

4 cups pureed green tomatoes
1 tablespoon salt
1/2 cup butter - not margarine
2 cups granulated sugar
2 eggs
2 cups all-purpose flour
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/2 teaspoon ground ginger
2 teaspoons vanilla extract
1 tablespoon grated orange zest
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup raisins - optional
1/2 cup chopped nuts - optional

Directions

Place chopped tomatoes in a bowl and sprinkle with 1 tablespoon salt. Let stand 10 minutes. Place in a colander, rinse with cold water, drain, rinse, and puree. 
  1. Preheat oven to 350 degrees  and grease a  9x13 inch baking pan.
  2. Cream butter and sugar. Add eggs and beat until creamy.
  3. Sift together flour, cinnamon, nutmeg, cloves, ginger, orange zest, vanilla, soda and 1/4 teaspoon salt. Add raisins and nuts to dry mixture; add dry ingredients to creamed mixture. Dough will be  stiff. Mix well.
  4. Add drained tomatoes and mix well. Pour into the prepared 9 x 13 inch pan.
  5. Bake for approximatley 40 to 45 minutes in the preheated oven, or until toothpick inserted into cake comes out clean.
Ideas . . .
I'm thinking a tart lemon glaze would be good on this cake.
Pecans for the nuts would bring it up a notch.
Dried cranberries instead of raisins might add some flare.
