Speaking of bananas . . .

While on the subject of bananas, we have been edging slightly off our usual healthy diet with banana pudding! Although you can make vanilla pudding from scratch, a boxed mix would work as well. It is a soothing, cool ending to a hot and miserably humid summer day!

Before you start the pudding, you slice up two or three bananas into slices and toss with the juice of one lemon and a quarter cup of granulated sugar. Set aside while you prepare the pudding of your choice. Once the pudding is cooked, let it sit for 15minutes and then layer it in a nice bowl, alternating with the banana slices. The best way to top it, to my mind, is with whipped cream. To prevent your homemade whipped cream from 'fading' away, whip it with a couple tablespoons of sour cream along with the sugar and vanilla extract. Made this way, the whipped cream lasts several edible days in the refrigerator.
