Sweet and Sour Chicken Thighs

This is a fast one, with little prep work, that goes great over some hot, buttered rice. A great way to provide a  nice Sunday dinner and give yourself a bit of a break, too. A crisp salad would go nicely with the menu!

Sweet and Sour Chicken Thighs
6-8 chicken thighs
1 cup diced celery
1 large onion, diced
1 can of pineapple chunks
1/2 cup diced green bell pepper
1/2 cup ketchup
1/2 cup brown sugar
1/2 teaspoon chili flakes
1/2 cup soy sauce
2 tablespons cornstarch

Place a little vegetable oil in a large skillet and thoroughly brown the chicken. Turn down the heat and continue until the chicken is just about cooked. Add in the celery, onion, and bell pepper and saute until the vegetables are almost tender. Add the pineapple, ketchup, brown sugar, chili flakes, and soy sauce and stir to combine. When everything is heated through, mix the cornstarch in 1/4 cup of water, add to the skillet and stir until sauce thickens. Check for seasoning.  Serve over rice and enjoy.
