Keeping promises . . .

My family's favorite treat is a homecooked Asian meal. Yeah, being of German descent, it might not be authentic Asian food but they like it! Well, they have been asking and although I have been preparing good meals, I never seemed to either come up with the energy or required ingredients at the same time. Today, I kept my promise! In fact, I kept it twice in a row. Last night, we had broccoli beef, Kung Pow Chicken, and Jasmine rice. This evening, it was Chinese Chicken Noodle soup along with homemade egg rolls. My now very, very happy family is cleaning up the kitchen for me and wiping up all the greasy mess I seem to spatter when I fry egg rolls. Yes, and as always, my poor tee shirt needs treatment for getting off the spots of grease that I got on myself.

A laundry hint on removing grease from clothing: Rub in some Dawn detergent the night before on the spots of oil/grease and then launder as usual the next morning. It almost always gets it out.

Cooler weather today which made it nice both in and outside the house. We are still hopefully expecting winter to arrive. The fire alerts in the nearby mountains have been high because of the drying weather.

My thrill of the day? My husband noticed that the neighbor, whose house corners on our backyard, has a pomegranite tree that has grown a lot over the last year. Grown to the point where it hangs over into our yard with branches sporting some pomegranites! I think I will trim their tree a bit . . . by removing those pesky pomegranites as soon as they turn deep red. I am a good neighbor, aren't I?

Cook It in a Crock Pot - Lasagna!

I usually like to spend time in the kitchen preparing that perfect meal. The times I know I will be out on errands and appointments, it is nice to know that dinner is basically taking care of itself! In fact, you can prepare the tomato/meat portion the night before, refrigerate it, and then just assemble your lasagna in the morning. There is something nice about coming home to the aroma of Italian food!

Cook it in a Crock Pot!

Ingredients

½ pound ground beef*
½ pound ground pork
1 large onion, chopped
4 garlic cloves, minced
1 can (29 ounces) tomato sauce
1 cup chicken broth
1 can (6 ounces) tomato paste
1 teaspoon salt
1 teaspoon dried oregano
1 teaspoon dried basil
½ teaspoon black pepper
½ chili flakes
Approximately 8 ounces of no-cook lasagna noodles*
4 cups (16 ounces) shredded part-skim mozzarella cheese
1 cup Ricotta or cottage cheese (or use ½ cup of each)
½ cup grated Parmesan or Romano cheese

Directions

In a skillet, brown the beef and pork. Add the onion and garlic and cook until the onion and garlic are tender. Drain off any excess oil. Add the tomato sauce, water, tomato paste, salt and spices; mix well.

Spread a fourth of the meat sauce in an ungreased 5-qt. slow cooker. Arrange a third of the noodles over sauce (break the noodles if necessary). Mix the cheeses together; spoon a third of the mixture over noodles. Repeat layers twice. Top with remaining meat sauce.

Cover and cook on low for 4-5 hours or until noodles are tender. Make 5-6 servings. Remember to have a crisp salad and garlic bread at hand. Since dinner is taking care of itself, you now have the time.

*I often just use the regular lasagna noodles and they cook tender without a problem. You could also use the regular one and par boil them until they are half way cooked and use them.

*You can go all beef or all pork for the meat portion of the dish. I’ve even made great lasagna using diced and cooked (as directed above) chicken breast. Ground turkey would be great, too. It’s a very amiable recipe!

Forgetting the point . . .

Although, to some extent, I can understand the current Wall Street protests, I think they have lost sight of their actual goal. Yes, a huge group of people with signs draws attention and people look, learn, decide. A huge group of people performation actions that lead to their arrest and damage to other people and property minimizes their agenda. When you leave your 'meeting' ground filthy and disrespect people who are just walking by, you've lost some of the point.

Several reported incidents made me very sad. In New York, a women in uniform, serving this country, was harassed and spit upon. Why? She isn't one of the corporate CEO's they are complaining about. She was merely walking from one point to another as a citizen of this country should be allowed to do. Why would the Wall Street protestors attack her that way? I can't understand mistreatment of the people in uniform who are part of what defends and protects this country.

Now that the protests have spread throughout the world, we get more information and reports of incidents that don't make sense. In Rome, there is video of a car being attacked and set on fire with the occupants barely able to escape from it. It wasn't a corporate car. It was just parked along the street belonging to someone probably dealing with the same problems the rioters are complaining about. Why would these people want to hurt people who are minding their own business?

The final blow was when a statue in St. John Lateran was destroyed. What a very sad sight to see that crushed statue of our Blessed Mother on the ground and the milling crowds walking by her. No, it is not the Blessed Mother herself but it shows how little respect the rioters have for anything. The Blessed Mother isn't a CEO or corporate employee?

When this first started, I thought well, good for these young people taking a peaceful stand. As the streets and parks all over the world start showing the ill effects and the citizens have to lock their doors and remain inside, you have to wonder how it all jumped the track like that. Perhaps, these people need a course in economics and come to realize that you can't change things overnight and destroying business property will be reflected in higher costs at the stores and services to make up for the cost of repairs. Burning random cars on the street because you can't control your anger won't lead people to your way of thinking.
