Saucy Chicken

Another fast and relatively easy meal for a busy day. Side with some hot rice and a crisp salad and your family will be happily fed another day.

Saucy Chicken
4-6 boneless chicken breasts
2 cans cream of mushroom soup
2 packages dry onion soup mix
1/4 cup white wine
1 small can or 1/2 cup fresh mushrooms
1/2 teaspoon chili flakes
Black pepper to taste

Salt and pepper the chicken breasts and brown in a bit of vegetable oil or butter in a large frying pan. If using fresh mushrooms, add now and stir a few minutes to brown them a bit. Add the rest of the ingredients, cover and simmer for 1 1/2 - 2 hours or until cooked through and tender. Serve over rice.
