Gingerbread Drop Cookies

Although I enjoy rolling out gingerbread cookie dough and spending time decorating them for Christmas, there are times when you want the spicy flavor of a ginger cookie but don't have time to fuss. This recipe is the one for that . . . and it calls for shortening which doesn't require softening before use so you can jump right into making these spicy drop cookies. Use parchment paper and you also reduce your clean up time.
