Turkey Trials . . .

 Several years after we got married, my husband got interested in cooking the turkey on Thanksgiving. Over the years, he spends time researching and trying to find better ways to fix the perfect turkey. This year, he discovered a way to brine it without having to soak the poor bird in a vat of salt water. When he came across a sale for small turkeys, he was up for the challenge. As you can see, the results were quite satisfactory. Uh, we have tried three turkey recipes over the last month . . . and the week after this is Thanksgiving! Actually, it is very inexpensive meat this time of the year and provides meat for a variety of leftover ideas as well as a carcass for simmering down into broth.
