Making use of the produce from the garden . . .

 Eggplants, peppers, and tomatoes ripened all at once so your Friday meatless meal turned into an unexpected treat with Eggplant Parmesan. Of course, my version is probably a lot different than the norm. It is interesting how much better a fresh from the plant eggplant tastes. Perhaps, the store-bought ones are why so few people like this funny, purple fruit!
