Spicy Tomato Cake
1 1/2 cups all-purpose flour
1 teaspoon baking powder1 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg
1/4 teaspoon ground black pepper
Pinch of salt
Freshly grated zest of one orange
3/4 cup brown sugar (You can use granulated sugar if that’s what you have on hand)
1/2 cup vegetable oil
3 tablespoons cider vinegar
1 teaspoon vanilla extract
Vegetable oil and spray either an 8x8-inch or 9x9-inch pan. Preheat oven to
350 degrees
Combine all the dry ingredients including the zest in a bowl. In another
bowl, mix the wet ingredients until well combined.
Add the dry ingredients to the wet ingredients and mix until just combines.
Do not beat or over mix the ingredients. Pour into prepared pan. Bake at 350 degrees for approximately 30 minutes or
until the top springs back when lightly touched or a toothpick inserted in the middle comes out clean of wet crumbs.
Cool on a rack and then think about icing with a lemon or orange
glaze!
