Super-Quick Tortilla Soup

When time is short and you need something hot and tasty set before your hungry family, this recipe might work for you.

Super-Quick Tortilla Soup
2 cups canned diced tomatoes
1 onion, chopped
2 cloves of garlic
2 teaspoon chili flakes (optional)
3 tablespoons or so of cilantro
1/2 teaspoon sugar
4-6 cups of chicken broth - canned or homemade
Tortilla chips
1 cup sharp Cheddar cheese, shredded
1 cup Monteray Jack cheese, shredded

In a blender or food processor, combine the tomatoes, onion, garlic, chili flakes, cilantro, sugar and chicken broth and liquify. Pour into a large cooking pot and simmer for 15-20 minutes. To serve, place a good handful of tortilla chips into each serving bowl, top with cheese, add hot soup, and serve. You can have some extra cheese and cilanto on hand for those who might like a bit more.
